Water Activity

Measures the free (unbound) water available in a sample for microbial growth, a different and more precise measure than raw moisture percentage.

Why exporters need it

Low water activity is what actually prevents mould and bacterial growth in stored spices, vanilla and other high-value dried commodities — two lots with identical moisture% can have very different water activity.
